SERVES 8-10
INGREDIENTS
1/3 cup Butter
1⁄2 cup Brown Sugar
3 Bananas, mashed
2 Eggs, whisked
1⁄4 cup Plant Milk
1 1⁄4 cup Buckwheat Flour
1⁄2 cup Almond Flour
1⁄2 cup GF Athlete Chocolate Protein Powder
1/2 cup Dark Chocolate, roughly chopped
2 tsp Cinnamon
1 tsp Baking Powder
1⁄4 tsp Salt
1 optional Banana, for on top
METHOD
1. Preheat oven to 150 degrees and prepare a loaf tin.
2. Beat the butter and brown sugar in a mix master (alternatively add all
ingredients to a blender).
3. Add the mashed bananas, eggs and milk and mix to combine.
4. Add buckwheat flour, almond flour, protein powder, chocolate chips, cinnamon,
baking powder, and salt.
5. Add the mixture to prepared loaf tin. Halve the additional banana and place on
top of mixture.
6. Bake for approximately 60-75 minutes or until a skewer comes out clean.
7. Cool before slicing.
