Gluten Free Homemade Bread

SERVES 10 SLICES


INGREDIENTS
2 cups Rice Flour
1⁄4 cup Psyllium Husk
2 1⁄2 tbsp Granulated Sugar (we used brown)
1 tsp Baking Powder
1 tsp Salt
1⁄2 tsp Bicarb Soda
1/3 cup Coconut Oil, melted
1 cup Warm Water (not boiling, but warm)
2 Egg Whites

METHOD
1. Preheat oven to 180 degrees and set aside a lined loaf tin.
2. Add rice four, psyllium husk, sugar, baking powder, salt and bicarb soda in a large bowl.
3. Stir to combine and break up any lumps if there are any.
4. Add coconut oil and warm water and stir through. Add egg whites and continue to stir
until combined. Use your hands and combine mixture together.
5. Transfer mixture into tin and create a mound in the centre, use the back of a spatula or
your hands to smooth out the top of the mixture.
6. Bake in the oven for 1 hour or until the crust is golden.
7. Remove from tin & cool on wire cake rack. Slice and enjoy!

NOTE: The recipe can be doubled if you would prefer a taller more typical bread size, you will just need to use your hands to combine the mixture as it can be a little loose. It will still bake and
combine though.
