Gluten Free Sweet Potatoes & Chicken Fritters

SERVES 4

INGREDIENTS
2 cups Sweet Potatoes, grated
1 cup Cooked Chicken Breast, roughly chopped
4 Spring Onions, finely sliced
1 Egg, whisked
1 tbsp Tapioca Flour
1⁄4 tsp Cumin
1⁄4 tsp Garlic Powder
1 tsp Salt
Pepper, to taste
Olive Oil, for cooking
Fresh Rocket, to serve
Mayonnaise or Favourite Sauce, to serve


METHOD
1. Combine sweet potato, cooked chicken, spring onion, egg, tapioca flour, cumin,
garlic powder, salt and pepper in a large bowl.
2. Heat oil in a large frying pan on a low-medium heat.
3. Using 1/3 cup of batter, place mixture in pan and using a spatula gently press
down mixture.
4. Cook fritters until golden, approximately 5 minutes each side (the batter will be
quite loose but binds when cooking, so be gentle when flipping).
5. Serve topped with your favourite sauce and fresh rocket.
